Strawberries On My Mind

Sadly with all the horrible and long weather my favorite summer activity, going to farmers’ markets, has been setback. Naturally, I do still go and find some quality veggies and am assured that soon will be ample time to for all sorts of goodies! But what is in full swing are the strawberries! I was recently out picking at Lavoie’s Farm in Hollis and got an abundance of delicious strawberries. I went a little strawberry happy and made a few sweet treats!

My strawberry shortcake

First thing on my list was strawberry shortcake! Nothing fancy as far as recipe goes (just used Bisquick and Cool Whip) but it was a nice light summer dessert. Next up, Nutella and strawberry pancakes! I follow Martha for my pancake recipe; 1 cup all-purpose flour, (I use whole wheat), 2 tablespoons sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, 1 cup milk, 2 tablespoons vegetable oil and 1 large egg. Then instead of lathering them with butter you spread delicious Nutella and spread cut up strawberries over the top. Life changing, try it for a little weekend morning indulgence.

For a night time summer indulgence try some Sangria! I made mine with strawberries, apples, peaches, orange, pear and a little bit of lemon. I used a shot of peach schnapps and a mix of Merlot and Shiraz because that is what I had on hand. I didn’t have enough to attempt making jam, but it’s on the list of things I’d like to try. And if all else fails… just eat them by the handful!283
